
Loaded Microwave Baked Potatoes

Ingredients
- 2 large russet potatoes
- 1 cup canned black beans, drained and warmed
- 1/2 cup salsa
- 2 tablespoons vegan butter
- 2 scallions, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Scrub the potatoes well and prick each one all over with a fork (about 8-10 times) so steam can escape.
- Microwave the potatoes on high for about 5 minutes, then flip and microwave 3-5 minutes more until a knife slides easily into the center. Total time depends on size and microwave wattage.
- While the potatoes cook, warm the black beans in a small saucepan over low heat or in the microwave with a splash of water.
- Slice each potato open lengthwise, fluff the inside with a fork, and add a pat of vegan butter and a pinch of salt.
- Top with the warmed black beans, a generous spoonful of salsa, sliced scallions, and a few grinds of black pepper. Serve hot.
