Ingredients

  • 2 large russet potatoes
  • 1 cup canned black beans, drained and warmed
  • 1/2 cup salsa
  • 2 tablespoons vegan butter
  • 2 scallions, sliced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Scrub the potatoes well and prick each one all over with a fork (about 8-10 times) so steam can escape.
  2. Microwave the potatoes on high for about 5 minutes, then flip and microwave 3-5 minutes more until a knife slides easily into the center. Total time depends on size and microwave wattage.
  3. While the potatoes cook, warm the black beans in a small saucepan over low heat or in the microwave with a splash of water.
  4. Slice each potato open lengthwise, fluff the inside with a fork, and add a pat of vegan butter and a pinch of salt.
  5. Top with the warmed black beans, a generous spoonful of salsa, sliced scallions, and a few grinds of black pepper. Serve hot.
