Ingredients
- 1 (8 oz) package tempeh, sliced into thin strips
- 2 tablespoons tamari or soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 4 thick slices sourdough bread
- 1 ripe avocado
- 1 tablespoon lemon juice
- 1 cup shredded romaine lettuce
- 1 medium tomato, sliced
- 2 tablespoons vegan mayo
- Cracked black pepper, to taste
Instructions
- In a small bowl, whisk together the tamari, maple syrup, and smoked paprika. Add the tempeh strips and toss to coat. Let them sit for 2-3 minutes while the pan heats.
- Heat olive oil in a skillet over medium-high heat. Add the marinated tempeh strips in a single layer and cook 2-3 minutes per side until deeply caramelized and crispy at the edges.
- Toast the sourdough slices until golden.
- In a small bowl, smash the avocado with the lemon juice and a pinch of salt.
- Spread the smashed avocado generously on each toast slice, then layer with the smoky tempeh strips, shredded romaine, and sliced tomato.
- Drizzle with vegan mayo and finish with cracked black pepper. Serve immediately while the tempeh is still hot and crispy.
