  • 1 (8 oz) package tempeh, sliced into thin strips
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 4 thick slices sourdough bread
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 1 cup shredded romaine lettuce
  • 1 medium tomato, sliced
  • 2 tablespoons vegan mayo
  • Cracked black pepper, to taste

Instructions

  1. In a small bowl, whisk together the tamari, maple syrup, and smoked paprika. Add the tempeh strips and toss to coat. Let them sit for 2-3 minutes while the pan heats.
  2. Heat olive oil in a skillet over medium-high heat. Add the marinated tempeh strips in a single layer and cook 2-3 minutes per side until deeply caramelized and crispy at the edges.
  3. Toast the sourdough slices until golden.
  4. In a small bowl, smash the avocado with the lemon juice and a pinch of salt.
  5. Spread the smashed avocado generously on each toast slice, then layer with the smoky tempeh strips, shredded romaine, and sliced tomato.
  6. Drizzle with vegan mayo and finish with cracked black pepper. Serve immediately while the tempeh is still hot and crispy.
