Vegan White 'Chicken' Chili

Ingredients

  • 4 cans Cannellini beans
  • 4 cups Vegetable broth
  • 1 can Coconut milk
  • 1 large Yellow onion
  • 4 cloves Garlic
  • 2 cans (4oz) Green chilies
  • 1 tbsp Cumin
  • 1 tsp Oregano
  • 1 to taste Salt and pepper
  • 2 tbsp Olive oil
  • 1 bunch Cilantro
  • 2 whole Lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, about 5 minutes.
  2. Add garlic, cumin, and oregano. Cook 1 minute until fragrant.
  3. Add beans (drained), green chilies, and broth. Bring to a boil. *(5 min)*
  4. Reduce heat, stir in coconut milk. Simmer 20 minutes, stirring occasionally. *(20 min)*
  5. Mash some beans against the side of the pot for thickness. Season with salt and pepper.
  6. Serve topped with fresh cilantro and a squeeze of lime.
